Helena at the Caesarea Port
A local Israeli cuisine combining the old with the new
In a magical bay amid the ancient port of Caesarea lies chef Amos Sion's critically acclaimed restaurant Helena.
The restaurant offers a contemporary Israeli menu that speaks a seasonal and local culinary language and includes fresh ingredients from locally sourced fishery and aged meats as well as extensive use of wild herbs handpicked through regional foraging.
"My inspiration comes from my near and far surroundings starting from the historic stones of the ancient port to the neighbouring fishing village and modern-day Caesarea. The sea acts as my metronome and compass.
I enjoy working with ancient techniques such as tabun and open fire, smoking and roasting, pickling, and the extensive use of local herbs among others growing wild along the beach."
